Chinese style tomate egg scramble

egg
tomato (match size of egg on 1-1 basis)
salt
sugar
chicken stock/flavor  ketchup etc optional
scallion (optional)

crack eggs in bowl, beat lightly without fluffing
cut tomato in wedges

fry egg in pan until set. Set aside and saute tomato and scallion (if using) until juice come out. season with salt, sugar. cook until liquid seeps out of tomato and dries out a little

stir in egg again. cover to cook a few minutes in medium heat


variation

saute tomato and scallion first. season with salt and flavoring such as ketchup and sugar. add cornstarch pre dissolved in water. set aside then fry egg. When egg is semi cooked, stir in tomato again.
