Chicken sausage and kikiam sambal

inspired by a SEAGAME incident-

chicken sausage, kikiam cut into bite sized pieces

fry chicken sausage and kikiam till cooked

make sambal- use soy sauce spices and herbs, basil, turmeric, lemon grass lots of chili, tamarind juice or powder, sugar

add boiled quail egg or quartered boiled chicken eggs


or do it gambas style

fry kekiam, sausge and quail eggs

saute onions, chopped red and green peppers, chopped hot chili

tomato sauce, oyster sauce, soy sauce sugar

garnish with chopped spring onions

marbled egg adobo flavor

hard boil egg

prepare flavoring soup

water, soy sauce, vinegar, sugar, peppercorn, bay leaf, oyster sauce

carefully crack egg shell with a spoon
simmer in flavoring soup for two hours or more/ if to be served cold, refrigerate after simmering but cool first

To serve, completely peel eggs, serve on a bed of fried onions
do not use adobo soup for sauce

oriental eggplant side dish

cut eggplant in quarters lengthwise

salt and set aside till water seeps out

squeeze out water and as much salt as possible

fry in medium high heat

make space in pan to add seasoning, soy sauce or oyster sauce, allow to boil for a few seconds then mix with the eggplant.

add chopped garlic for aroma and chopped green onion if available

add sesame seeds and sesame oil

stir fried vegetable - mushroom and cucumber

adapted from a youtube video

clean and cut up mushroom and cucumber into bite sized pieces

fry mushroom until juices seep out. set aside

saute garlic, ginger then add cut up cucumber

when cucumber has changed color and softened add seasonings -salt, pepper, soy or fish sauce

add oyster sauce

add chopped garlic

thicken lightly with starch water

add sesame oil

plate and serve

penoy kimchi omelet

saute garlic, minced onions tomatoes
add chopped kimchi
break penoy eggs in bowl

put in saueteed kimchi while still hot in bowl, set aside for a few minutes

heat pan again and pour in egg kimchi mixture. fry in low heat till cooked

Chinese style tomate egg scramble

egg
tomato (match size of egg on 1-1 basis)
salt
sugar
chicken stock/flavor  ketchup etc optional
scallion (optional)

crack eggs in bowl, beat lightly without fluffing
cut tomato in wedges

fry egg in pan until set. Set aside and saute tomato and scallion (if using) until juice come out. season with salt, sugar. cook until liquid seeps out of tomato and dries out a little

stir in egg again. cover to cook a few minutes in medium heat


variation

saute tomato and scallion first. season with salt and flavoring such as ketchup and sugar. add cornstarch pre dissolved in water. set aside then fry egg. When egg is semi cooked, stir in tomato again.
