oriental eggplant side dish

cut eggplant in quarters lengthwise

salt and set aside till water seeps out

squeeze out water and as much salt as possible

fry in medium high heat

make space in pan to add seasoning, soy sauce or oyster sauce, allow to boil for a few seconds then mix with the eggplant.

add chopped garlic for aroma and chopped green onion if available

add sesame seeds and sesame oil

plate and serve
